#Poori Bhaji ( Deep fried bread with Mashed potato curry)

It is an Indian whole wheat bread formed in flat rounds of dough that puff up when deep fried. It is  light, round, unleavened and it is suitable for a simple breakfast or brunch. Here I give you my version of recipe without spicy and if you wish like adding spicy into this you can 😉😉

Serves :- 3-4 people
Preparation time :- 20 mins
Cooking time :- 30 mins
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon

Ingredients 

For Poori
  1. Whole wheat flour - 1½ cup / 350 grams
  2. Salt                         - 1 tsp
  3. Water                      - ¾ cup / 200 ml 
  4. Oil                           -  500 ml
For Bhaji (Potato curry)
  1. Potato             - 3-4 medium sized 
  2. Green peas     - ¾ cup / 180 grams
  3. Onion             - 2 medium sized 
  4. Tomato           - 2 medium sized 
  5. Ginger             - ½ tbsp
  6. Garlic              - ½ tbsp
  7. Curry leaves    - few
  8. Turmeric powder  - ½ tsp
  9. Coriander powder - ½ tbsp
  10. Oil                         - 1½ tbsp
  11. Mustard seeds       - 1 tsp
  12. Cumin seeds         - 1 tsp
  13. Salt                        - as per your taste
Method 

For Poori

  1. In a bowl add flour and salt, mix well. Then add water and mix the dough well. 
  2. Remember that for this dough you should not add more water. This dough should not be sticky. The specified amount water is more than enough. So once the all the flour is wet then start kneading the dough for 5 minutes. 
  3. Then add 1 tbsp oil and again knead it for 1 minute. Let it rest for 20 minutes.
  4. Then take a wide sauce pan and add 500 ml oil. Allow it to heat in medium heat for 7 minutes.
  5. Take small round sized ball, roll it even round. Put it in the hot oil and fry it as shown in the video. Unevenly rolled dough or if the oil is not hot enough then poori will not puff up when you fry it. Refer the above video for your clarification. 😄
  6. Fry poori on each side for 15 seconds only. Very lightly press poori as shown in the video which help to puff up.  
For Bhaji 
  1. In a pan add oil and heat it up. Then mustard seeds, cumin seeds, onion, finely chopped ginger and garlic. Saute it for 2 minutes.
  2. Then add tomatoes, saute it for a minute. Then add turmeric and coriander powder, mix well until everything cooks well. 
  3. Next add the peeled and chopped potatoes into it. Mix well and then add green peas. Also add 1 cup of water and 2 tsp of salt. 
  4. Mix everything well, close the pan and cook it for 10-12 minutes or until potatoes are cooked well. Check the salt at this stage and adjust it according to your taste. 
  5. Once everything is cooked well, take a potato smasher and smash the potatoes coarsely. Add the curry leaves and coriander leaves for garnishing.
