#Beetroot soup with yogurt

A simple and delicious soup to keep yourself warm during cold days. All you need is few ingredients and little bit of time. Hope you would love this soup and lets get into the recipe...😊😊 

Serves :- 2 people
Preparation time :- 10 mins
Cooking time :- 30 mins
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon



Ingredients

  1. Beetroots -   2 medium size
  2. Carrots    -  1 small sized
  3. Shallots   - 2 pieces
  4. Ginger    - 2 inch piece
  5. Cumin seeds  - 1 tsp
  6. Bay leaf    - 2
  7. Star anise  - 2
  8. Oil           - 1 tbsp
  9. Pine nuts - 1 tbsp  (or ground nuts or sesame seeds)
  10. Salt       -  as per taste
  11. Pepper - as per taste 
  12. Yogurt - 1 tbsp
  13. Coriander powder - 1 tsp

Method
  1. Peel of the skin of carrots and beetroots. Chop the into medium sized pieces. 
  2. In a stove keep a pot then add ½ tbsp oil, ½ tsp cumin seeds, bay leaves, star anise, coriander powder, chopped shallots, carrots and beetroots. Add 2 cups of water and some salt as per your taste. 
  3. Mix everything and close the pot. Allow it to cook for 30 minutes in medium flame until vegetables are soft. If you are using pressure cooker cook it for about 5 whistles or for about 15 minutes in medium flame.
  4. When the vegetables are well cooked, remove the bay leaves and star anise out. 
  5. Then blend the vegetables using a blender or mixer as smooth pureed soup. Check the salt taste and add if you want more. Also add crushed pepper as per your taste. 
  6. In a separate pan add ½ tbsp of oil and allow it to heat. Then add ½ tsp of cumin seeds, pine nuts and saute it until the nuts turns into light brown colour. Sprinkle this pine nuts on the soup and put some yogurt on top of it. 

Serve it hot or warm with some breads of your choice. 👌👍
