#Homemade Cream cheese

 If you are a cream cheese lover then I would recommend you to try this out once to enjoy the taste of fresh cream. It is very simple to make and takes time to settle down. Before starting the process make sure you have muslin cloth or cheese cloth or clean light cotton cloth with you. Lets get into the recipe....😊 

Serves :- 2-3 people
Preparation time :-  5 mins
Cooking time :- 10 mins
Measurements :- in grams and in spoons

*tbsp - Tablespoon    
*tsp   - Teaspoon

Ingredients

  1. Cooking milk cream  - 1 litre  (or full fat milk)
  2. Vinegar   - 1 tbsp  ( or lemon juice)

Method

  1. In a pot add the cream or thick milk and allow it to boil. Once it reaches its boiling point and then take the pot out from the heat. Then add vinegar or lemon juice into it. Leave it for 15 minutes without disturbing. After 15 minutes you milk/cream would be curdled.

  2. Then take the sieve and cover it with the muslin/cheese/cotton cloth which you have. Keep the sieve on the top of another new pot or a bowl. Because this will help to collect the liquid which come out of the cheese. 
  3. Now pour the curdled milk/cream mixture into the sieve. Leave it for an hour. The curdled cheese stays on the cloth and the water drains out into the bottom pot. Note that when you are using a cotton cloth it might take longer to drain the water because of its thickness.
  4. Then tie the cloth tightly and make a ball. Rinse this ball in running water for 20 seconds to get rid of vinegar taste. Place this ball again on the sieve, place a weight on it and leave it inside the fridge overnight. This process will drain out all the excess water from the cheese.

  5. The next morning you will a fresh cream cheese inside the cloth ball. If you find this cheese more crumbly then put that into the food processor or blender, blend it for 10 seconds. That is it you have your fresh cream cheese.
You can use this cream cheese for various recipes and you can also add flavours into it by adding some fresh herbs or fruits or more... 😊😊
