#Mushroom Briyani

Briyani is a rice variety cooked with mushrooms, peas and spices which blends together and gives wonderful flavour and taste. I do not say it is originated in India but it is one of the must try menu in the list. This one dish is cooked in many different ways in different regions of India. Here I show you my own way which I cook all the time and it never failed me. I do this recipe without spicy because my family do not prefer it. Hope it will be helpful for you. Lets go.......😊😊

Serves :- 2 people
Preparation time :- 15 minutes
Cooking time :- 15 minutes
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon

Ingredients

  1. Mushroom  - 200 grams
  2. Basmati rice  - 200 grams
  3. Onion   - 2 medium sized
  4. Tomato  - 1 medium sized
  5. Green peas - ½ cup
  6. Soya chunks - ½ cup ( if you like)
  7. Mint leaves   - 1 cup
  8. Ginger paste   - ¾   tbsp
  9. Garlic paste    - ¾   tbsp
  10. Green chilli - 2 ( if you like)
  11. Coriander powder   - ½ tbsp
  12. Yogurt(3.5% fat)   - 1 and ½ tbsp
  13. Ghee - 1 tbsp
  14. Cardamom  - 3 pieces
  15. Cloves - 4 pieces
  16. Bay leaves  -  2 pieces
  17. Cinnamon sticks  -  1 inch piece
  18. Fennel seeds  - 1 tsp
  19. Cumin seeds  - ½ tsp
  20. Salt  -  according to your taste.
  21. Water  - 350 ml / 1 and ½ cup 

Method 

  1. First wash the rice 3 times and soak it in water with measurement specified above. Soak it for 15 minutes.
  2. Slice the Onion. Finely chop the tomato, mushroom and mint leaves. Keep ginger and garlic paste ( or finely chopped) ready. 
  3. Keep a cooking pot on the stove and keep the heat in medium. Add ghee or oil and allow it to heat up. It takes 1 minute. Then add 2 cloves, 2 cardamom, 2 bay leaves cinnamon sticks, fennel seeds and cumin seeds.  
  4. Then add the onions. Saute well until they turn dark golden brown colour. Please be patient until you get this colour because this is the very important step in making Briyani. Check the colour in the picture below.
  5. Then add the ginger and garlic paste. Saute it for exactly 1 minute. Then add the tomato and mint leaves, mushroom, soya chunks potato, green peas, coriander powder and yogurt. Saute them well until everything combined. Add  1/2 cup water, 1 tsp salt and close the lid. Let the vegetables cook for 10 minutes (If you want to add green chillies add in this stage).
  6. Next add the soaked rice with water into this pot. Add salt at this stage and check the taste. If you want you can adjust by adding more. Add the coriander leaves also. 
  7. Once the water starts boiling bring the heat to completely low level. Cover the pot first with aluminium foil as shown in the picture and the close the lid on top of it. This method helps to prevent the flavours inside the pot itself. Now cook it in very low flame for 10 minutes. 
  8. After 10 minutes open the lid carefully, very slowly and gently mix the rice, because it will break and become sticky when you do it hard. That is it, Briyani is done....Serve it with Raita or boiled egg.
Simple Raita
  • In a bowl add 1 cup yogurt(3.5% fat), 1/2 tbsp sugar and 1 tsp salt.
  • Then add finely chopped 1 onion, 1 cucumber and few coriander leaves.
  • Mix well and serve it. 
    Tips
    1. You can cook the recipe with mixed vegetables like carrots or potato or beans or broccoli. The measurements are same. 
    2. Salt and spicy can be adjusted according to your taste.
