#Whole Wheat Walnut Cake

This is my version of cake which I often make it for my son. He generally refuse to eat any kind of nuts so I found one way which is this. I have served this cake with "Honey Oregano Sauce" which I have specified at last. If you are beginner please do follow the process step by step so that you will get your final product without flaws ( Also check my page for 'Basics of baking'). Before starting this please make sure all your ingredients are at room temperature. I hope you and your kids will enjoy this moist, healthy and tasty cake. Lets go......

Serves:- 6 to 8 people
Preparation time :- 30 mins
Baking time :- 45 mins
Measurements :- in grams (or) cups & spoons

*tbsp - Tablespoon 
*tsp   - Teaspoon


Ingredients

  1. Whole wheat flour - 164 grams / 1 cup ( Flour type 1050)
  2. Baking powder       - 10 grams / ¾  tbsp
  3. Salt                         - 1/2 tsp
  4. Oil                          - 150 ml / (½ cup + 2 tbsp)
  5. Cinnamon  powder - 2 tsp
  6. Dry Ginger powder - 1 tsp
  7. Milk                         - 85 ml / (¼  cup + 2 tbsp)
  8. Walnuts                    - 200 grams / (2 cups + 2 tbsp)
  9. Brown sugar            - 150 grams / ¾  cup
  10. Apple puree             - 145 grams / (½ cup + 2 tbsp)
  11. Eggs                         - 3 large
Method
  1. First prepare all the basic methods before starting your baking process like preheating the oven at 180°C and preparing cake tin.
  2. Then finely chop the walnuts or make into coarse powder. You can do it how you prefer.
  3. Peel off the apple skin and make a fine puree. I would recommend you to use it as puree instead of pieces because this puree will act as a moisturising for your cake.
  4. Sift the dry ingredients flour, baking powder, salt, cinnamon and ginger powder in a separate bowl. 
  5. In a another bowl add the eggs first. Beat this eggs well in medium speed for a minute until it becomes frothy. If you do not have a hand blender do it with hand or food processor or in Mixer.

  6. Then add apple puree, oil, milk, walnuts and sugar. Give a good mix.
  7. Then add the sifted dry ingredients and mix slowly until all the ingredients are well combined.
  8. Pour this batter into the prepared cake tin and bake it for 40-45 minutes or until done. Make sure you do not disturb the batter in between by opening during its baking process.
  9. Check the cake with a knife if it comes out clean. If yes then your cake is ready.
Tips
  1. If you do not have apples at home you can replace it with mashed banana as well with same measurement specified for apple puree.
  2. The colour of the cake may differ from the picture shown because of the sugar colour you use. Not to worry.
  3. If you do not like to use cinnamon and ginger powder then you can replace it with Vanilla extract 1 tsp. I used this powder for its flavour and also helps in digestion for kids.
  4. Note that this cake will not be very spongy like normal cake because of the flour texture. But this will be moist and airy.



Honey Oregano Sauce
Ingredients
  1. Honey         - 2 tbsp
  2. Butter          - 1 tbsp
  3. Water           - 1 tbsp
  4. Oregano       - 1 tbsp (fresh or dried)
  5. Whole walnuts -  few
Method
  1. Heat a pan in medium heat. Add butter in it and wait until it melts.
  2. Then add the whole walnuts and chopped fresh Oregano. If you do not have fresh one you can also use the dried oregano herbs. Saute them for 30 seconds.
  3. Then finally add honey and water. Mix them well for 10 seconds on heat and take the pan out of heat. Your sauce is ready.
