#Fresh Berries Tea Cake

Yes, yet another cake recipe loaded with fresh fruits. If you are beginner please do follow the process step by step so that you will get your final product without flaws ( Also check my page for 'Basics of baking'). Before starting this please make sure all your ingredients are at room temperature. I hope you will enjoy this soft, moist and tasty cake. Lets go......😊😊

Serves:- 4-5 people
Preparation time :- 20 mins
Baking time :-  50-60 mins
Measurements :- in grams (or) cups & spoons

*tbsp - Tablespoon 
*tsp   - Teaspoon



Ingredients
  1. Flour   - 250 grams  / 1½ cup
  2. Baking powder  - 6 grams  / 2 tsp
  3. Salt        - 1 gram / ¼ tsp
  4. Butter     - 125 grams / (½ cup + 1 tbsp)
  5. Eggs     - 2 large or 3 medium
  6. Sugar    - 150 grams / (½ cup + 3 tbsp)
  7. Thick yogurt - 120 grams / ½ cup
  8. Lemon zest  - ½ tbsp
  9. Lemon juice - 15 ml / 1 tbsp
  10. Vanilla extract - ½ tsp
  11. Fresh berries   - 200 grams  ( any berries like strawberries or raspberries or blueberries)   
Method 
  1. Make sure you have all your ingredients properly measured and also at room temperature. Keep your baking tin prepared. Keep your oven preheated at 180 degree Celsius. 
  2. Take a bowl and sift all the dry ingredients like flour, baking powder and salt. In a separate bowl add berries and 1 tbsp of sifted flour. Mix the berries until the flour is coated well on the berries. This step will prevent the fruit from settling down at bottom while baking.
  3. In  another separate bowl add butter and sugar (if you like more sweetness you can add little more sugar as well) . Beat it well for 30 seconds until creamy. Then add eggs one by one and beat 10 seconds for each eggs. 
  4. Then add yogurt, vanilla extract, lemon zest and lemon juice. Mix it well for 10 seconds.
  5. Then add half the amount of sifted flour with the egg mixture. Mix it well until all combined then add the remaining half flour and do the same. 
  6. Finally add the berries into this mixture and mix it very gently. 
  7. Once all combined then add the batter into the baking tin.
  8. Bake it for 50 - 60 minutes or until the cake is done. Remember that each oven varies with its temperature, so keep an eye on the cake after 45 minutes.
