#Instant Cornmeal Uthappam ( Savory pan cake using Cornmeal flour)

 This is an instant, super simple and healthy recipe for your weekend brunch. If you have all the ingredients ready you can prepare this no time. Without any more explanation lets get into the recipe 😊

Serves :- 2 people
Preparation time :- 10 - 20 mins
Cooking time :- 15 mins
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon

Ingredients

For Batter

  1. Yellow Cornmeal flour   - 78 grams / ½ cup 
  2. Rice flour(#)     -  39 grams  / ¼ cup
  3. Yogurt    - 61 grams / ½ cup  ( room temperature)
  4. Water  - 240 ml / 1 cup
  5. Salt   - 1½ tsp.
  6. Oil  - as required

For Garnish

  1. Onion    - 1 medium sized 
  2. Tomato  -  1 small sized
  3. Fresh coriander leaves - few 

Method 

  1. In a bowl add cornmeal flour, rice flour, salt, yogurt and mix it together. Then add water little by little to reach the proper consistency ( video for reference below). Close it and leave it for 30 minutes. 
  2. Take a wide tawa or crepes pan, allow it to heat it up. Then brush some oil on it. Pour the batter and spread it lightly. Then garnish some onion, tomato and coriander leaves on it. Apply some oil on the sides and cook it for a minute. Wait until the sides turn brown colour and then flip it to the other side and cook it for a minute. The reference video is given below.
