#Lemon Rice with Egg fry

This is a very simple rice which can be made in no time. Also you can pack this for your travel or picnic because this will not get spoiled faster. It will stay fresh even for 24 hours in a room temperature. Our family loves this dish with egg fry but this rice can also be enjoyed with potato fry or with any meat dish  you like. Lets go......

Serves :- 2-3 people
Preparation time :- 15 mins
Cooking time :- 20 mins
Measurements :- in grams and in spoons



*tbsp - Tablespoon
*tsp   - Teaspoon



Ingredients
  1. Basmathi rice              - 180 grams   / (¾ th cup + 2 tbsp)
  2. Water                           - 360 ml        / (1 cup + ½ cup)
  3. Lime                            -  1 medium sized 
  4. Mustard seeds             - 1 tsp
  5. Chopped Ginger          - ½ tbsp
  6. Cumin seeds                - ½ tsp
  7. Cashew nuts                - 1 tbsp
  8. Peanuts                        - 1 tbsp
  9. Turmeric powder         - 1 tsp
  10. Salt                              - as per your taste 
  11. Oil                               - 1 tbsp 
  12. Ghee                            - 1 tbsp
  13. Coriander leaves         -  1 tbsp chopped
  14. Curry leaves (*)           - 5 to 6 leaves (optional)
  15. Red chillies                   - 2  (optional) 

Method 
  1. First wash the rice 3 times and soak it in water for 10 minutes.
  2. Take juice from the lime and keep it aside.
  3. Drain the water from rice after 10 minutes, keep the rice aside.
  4. Then in a cooking pot add water about 360 ml and allow it to boil well. Then add 1/2 tsp salt and the rice in it. Mix it, close it and allow it to cook in medium heat for 10 minutes. 
  5. Once the rice is done open the lid then add 2 tbsp of ghee ( or oil) and 1 tsp salt. Mix it gently. The ghee or oil prevents rice from sticking each other. 
  6. Next in a small pan add 2 tbsp oil and allow it to heat in medium heat.
  7. Then add mustard seeds, Red chillies, cumin seeds, peanuts, cashew nuts, chopped ginger. Mix it for 10 seconds. Then add turmeric powder and curry leaves. Mix well for 10 seconds and take off from the heat. Now add lime juice and 1/2 tsp salt into this. 
  8. Add this lime juice mixture with cooked rice and add chopped coriander leaves. Mix all together gently and well combined.
  9. Once you have mixed the rice check for the salt taste. If you need more add little and mix it well. If you do not mix well you will taste uneven mixture of taste. So make sure you mix the rice well and gentle. 
  10. Egg fry :- Take a pan and allow it to heat. Brush the pan with little oil. Break an egg in the centre, sprinkle some salt, pepper and dry mixed herbs seasoning if you like (also chilli flakes if you like), after 30 seconds flip the egg to the other side. Let it cook for another 30 seconds. That is it your egg fry is done. 
Tips
  1. The ingredients marked (*) are available only in Indian stores, if you are not living in India. 
  2. Salt and Spice can be adjusted according to your taste.
  3. If you do not like to add chilli and curry leaves you can avoid it.
