#Aaloo- Pudina Paratha( Potato - Mint Stuffed Indian Roti )

One of the easiest and delicious bread variety which suits for perfect brunch or dinner. The name "Aaloo" means Potato, "Pudina" means Mint leaves and "Paratha" means stuffed and rolled flat bread. This is a north Indian dish but widely eaten all over the country. There are various kinds of version of this and here I have shown you my kind. Hope you will find it different and you will like it, lets go.....😃

Serves :- 2-3 people
Preparation time :- 15 mins

Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon

Ingredients
For Dough
  1. Whole wheat flour(Type 1050)  - 310 grams / 2 cups
  2. Water                                          - 1 cup
  3. Salt                                             - 1 and ½ tsp
For Stuffing
  1. Potato                                         - 300 grams / 3 medium sized
  2. Garlic                                         - 2 cloves
  3. Coriander leaves chopped          - 1 tbsp
  4. Mint leaves chopped                  - 1 tbsp
  5. Lemon juice                               - ¾ th tbsp
  6. Turmeric powder                       - ½ tsp
  7. Garam masala powder               - ½ tbsp
  8. Cumin seeds                              - ½ tsp
  9. Oil                                              - 1 tbsp
  10. Salt                                             - as per taste

Method
  1. In a bowl add flour and salt, then mix it well. Add water 1/2 cup at a time, then 1/2 cup and mix well. Once the flour completely coated with water as shown in the picture, knead the dough for 3 minutes and keep it aside. Let the dough rest for 20 minutes.
  2. Boil the water in a pot, add 2 tsp salt and cook the potatoes for 20 minutes. Potatoes has to be cooked soft. Drain the water and allow it to cool down then peel of its skin. Smash the potatoes well.
  3. In a cooking pot add oil and heat it in medium heat. Then add cumin seeds, finely chopped garlic, mint leaves, coriander leaves, turmeric powder and garam masala powder. Add the mashed potatoes and mix well. Check and adjust the salt at this point.
  4. Next add the lemon juice and mix it, keep it aside and let it cool down.
  5. Later on make a medium orange sized ball out of dough, roll the dough and stuff it with potato mixture. Roll it flat and gentle, cook it on pan for 30 seconds each side. For reference check the video given below.


Tips
  1. If you want to add onions or green chillies for stuffing you could add it according to your choice.
  2. This potato stuffing can be prepared ahead and can be stored in fridge for 2 days.
