#Vegetable Stew with Coconut milk

 Yet another simple one to prepare and suitable to consume it on cold weather. The flavour of coconut gives you different taste. This is a popular dish from the state of Kerala and it is usually served with Idiyappam or Appam which is made of rice. But to make it simple you can eat this with rice as well. Lets get into the recipe.....😊😊


Serves :- 2-3 people
Preparation time :- 15 mins
Cooking time :- 20 mins
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon

Ingredients

  1. Shallots    - 3 pieces (if Indian Shallots use 10-15 pieces)
  2. Ginger      - 2 inch pieces
  3. Mixed vegetables        - 500 grams / 2 cups   (any vegetable of your choice)
  4. Black mustard seeds   - 1 tsp
  5. Cumin      - 1 tsp
  6. Cloves      - 4 pieces
  7. Cinnamon stick    - 1 Inch piece
  8. Coconut milk       - 200 ml / 1 cup
  9. Oil        - 1 tbsp (coconut or sesame oil)
  10. Salt       - as per the taste
  11. Crushed black pepper    - 1 tsp
  12. Coriander leaves          - a few
  13. Green chillies               - 2 pieces (optional)
Method
  1. Add oil in a saucepan, wait 2 minutes for the oil to get hot.
  2. Then carefully add mustard seeds, cloves and cumin seeds to the pot.
  3. Next add thinly sliced ​​shallots and ginger and green chillies if you like to add spicy. Saute them for a minute.
  4. Then put the medium-sized cut vegetables in the pot. Mix them well.
  5. Then add 1 cup of water and salt to your taste. Mix them once and close the pot. Let the vegetables cook for 10-12 minutes.
  6. Once the vegetables are cooked, add the coconut milk, crushed pepper. Mix them well and cook for just a minute.
  7. Finally garnish it with sprinkle of fresh coriander leaves.
Tips
You can make this same recipe with chicken instead of vegetables. 

Serve it hot with rice or breads of your choice.....😊
