#Chocolate Cake with Berry Mousse

Holiday time is coming around so thought of giving you some sweet treat. Here is my style of simple mousse cake which takes less effort to make and still delicious to taste. This simple cake might surprise your family members with a different taste and flavours. Lets get into the recipe......😊 
Serves:- 6 people
Preparation time :- 30 mins
Baking time :-  45 - 50 mins 
Measurements :- in grams (or) cups & spoons

*tbsp - Tablespoon 
*tsp   - Teaspoon
Ingredients

For cake
  1. Flour - 175 grams (type 405)
  2. Cocoa powder - 30 grams
  3. Sugar - 190 grams
  4. Baking powder - 2 tsp
  5. Baking soda - ½ tsp
  6. Salt - ¼ teaspoon
  7. Buttermilk - ½ cup
  8. Milk - ½ cup
  9. Coffee - ¼ cup (if instant coffee powder ½ tbsp)
  10. Oil - 115 grams
  11. Eggs - 2 large
  12. Vanilla extract - 1 tsp
For mousse
  1. Philadelphia cream cheese - 200 grams
  2. Whipped cream - 200 ml
  3. Sugar - 100 grams
  4. Cream stiffener - 8 grams
  5. Fresh berries - 300 grams (any berries you like)
Method
For cakes
  1. Make sure all the ingredients are room temperature and not cold.
  2. Prepare and have a 9 inch cake pan ready.
  3. Preheat the oven to 180 ° C for 10-12 minutes.
  4. In a bowl, sieve 1 flour, baking powder, baking soda, salt and coconut powder. Then add sugar and give a mixture.
  5. In another bowl, add 2 eggs, oil, buttermilk, vanilla extract, warm milk and warm coffee. If it is an instant coffee powder, add it with milk and then warm it up.
  6. Now add the mixture from bowl 2 to bowl 1. Mix them well for a minute.
  7. Now place this cake batter in the cake pan and bake for 40 to 45 minutes or until the cake is ready. Let the cake cool completely. 
For mousse 
  1. Keep the cream cheese at room temperature.
  2. In a blender, add the berry mixture and stir until smooth. Then strain this juice into a saucepan. Add sugar and cook over medium heat for 10 minutes. Let this mixture cool down. I have used mix of blueberries, raspberries and blackberries. 
  3. In another bowl, add cold whipped cream and cream stabilizer and beat for a few minutes until a stiff climax is reached. Then put it in the refrigerator.
  4. In another bowl, add the cream cheese and cooked berry mixture until everything is together. 
  5. Then add the whipped cream to the cream cheese bowl and mix gently until everything is well mixed.
Organize
  1. Take a 9 inch spring form pan and cover the bottom and sides with Clingfilm. 
  2. Then put the cake down first. 
  3. Next add mousse and distribute evenly. 
  4. Store the cake pan in the refrigerator for at least 4 hours or overnight.
  5. Once the mousse is set, carefully remove the sides of the cake pan. Decorate it with your choice.
