#Pinacolada Cocktail Cake

 I decided to bake a cake birthday cake, but was wondering what to bake. I was bored of baking chocolate and vanilla cake all the time. So I decided to do something different and ended up doing this cocktail cake. Yes of course this cake need a liquor in it but you can still do it without liquor. I hope you and your family would love this cake for sure. Lets get into the recipe....😊😊

Serves:- 6-8 people
Preparation time :- 30 mins
Baking time :-  45 - 50 mins 
Measurements :- in grams (or) cups & spoons

*tbsp - Tablespoon 
*tsp   - Teaspoon

Ingredients

This recipe makes 5 pieces (or layers) of 6 inch cake. I baked it as 5 separate 6 inch cakes. You can also bake it in one pan and cut the cake into layers. So you decide the baking pan according to your convenience. *Pineapple extract mentioned in this recipe is optional. You would find it in Indian stores. 

For Coconut cake base 

  1. Flour - 210 grams / 1 cups + ¼ cup + 1 tbsp
  2. Sugar - 184 grams/ ¾ cup + 3 tbsp
  3. Baking powder - 7 grams/ ½ tbsp
  4. Baking soda - ¼ tsp
  5. Salt - ¼ tsp
  6. Butter - 114 grams / ½ cup
  7. Oil - 43 grams / 3 tbsp + 1 tsp
  8. Sour cream - 50 grams / 3 tbsp (or Yogurt )
  9. Coconut milk - 200 ml / ¾ cup + 1 tbsp
  10. Eggs - 2 Large
  11. Pineapple extract - 1 tsp (Optional)*

For Pineapple Filling

  1. Fresh Pineapple - 500 grams
  2. Sugar - 100 grams / ½ cup
  3. White/Dark Rum - 2 tbsp (or according to your taste)
  4. Pineapple extract - 1 tsp (Optional)*

For Cream Frosting 

  1. Whipping cream - 250 ml / 1 cup
  2. Powdered sugar - 1 tbsp
  3. Cream stabilizer (Sahnesteif) - 8 grams / ½ tbsp

Method 

Step 1 - Prepare the Pineapple filling

  1. Chop the pineapples finely into very small pieces. 
  2. In a pot add pineapples and sugar, cook it in medium heat for 15 minutes until the fruits gets soft. Do not close the pot while the fruit is cooking, let it be open. 
  3. Mix it in between so that fruit will not stick to the bottom. 
  4. Once the fruit is cooked keep it aside and let it cool down. 
  5. Once it is cooled down add rum and pineapple extract then give a mix. 

Step 2 - Prepare the whip cream


  1. In a bowl add the cold whip cream and beat it in medium speed for a minute. 
  2. Then add sugar and cream stabilizer. Beat it until you get stiff peaks. Make sure you do not over beat it. 
  3. Once it is done keep the whipped cream inside the fridge. Will use it later. 

Step 3 - Bake the Cake 


  1. Make sure you have all your ingredients measured and also at room temperature. Keep your baking tin prepared. Keep your oven preheated at 180 degree Celsius. 
  2. Take a bowl and sift all the dry ingredients like flour, baking powder and salt. 
  3. In  another separate bowl add butter and sugar (if you like more sweetness you can add little more sugar as well) . Beat it well for 30 seconds until creamy. Then add eggs one by one and beat 30 seconds for each eggs. 
  4. Then add yogurt/sour cream, pineapple extract and coconut milk. Mix it well for 10 seconds.
  5. Then add half the amount of sifted flour with the egg mixture. Mix it well until all combined then add the remaining half flour and do the same.
  6. Once all combined then add the batter into the baking tin.
  7. Bake it for 45 - 50 minutes or until the cake is done. Remember that each oven varies with its temperature, so keep an eye on the cake after 45 minutes. 
  8. Once the cake is done allow it to cool down completely. 

Step 4 - Layer the Cake

  1. Take a cake board or a plate. Keep the first layer of the cake.
  2.  Add whipped cream and spread it evenly. Then spread some cooked pineapples on it. 
  3. Then add the next cake base on top of this and repeat it till the end. 

Step 5 - Decorate the cake 



  1. Then finally cover the complete cake with the whipped cream and decorate it of your choice. Don't worry about perfection. 
  2. Once the decoration is done you need to keep this cake in the fridge for at least 3 hours to set completely.
