#Tomato Soup with Crispy Tofu Fry

Serves :- 3-4 people

Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon

Ingredients

For the soup

  1. Tomatoes - 6 medium
  2. Garlic - 2 cloves
  3. Red onions - 1 medium
  4. Bay leaves - 2
  5. Cinnamon stick - a 2 inch piece
  6. Vegetable broth - 500 ml  (or normal water)
  7. Salt - to your taste
  8. Pepper - to your taste.
  9. Oil - 1 tbsp
  10. Cream cheese - ½ cup
  11. Parmigiano Reggiano - ¼ cup (grated)
  12. Sugar - 1 tbsp.
For fried soy chunks
  1. Soy medallions - 1½ cup
  2. Ginger paste - ¼ tbsp
  3. Garlic paste - ¼ tbsp
  4. Coriander powder - ½ tbsp.
  5. Cumin powder - 1 tsp
  6. Salt - to your taste
  7. All purpose flour  - 1 tbsp (Type 450)
  8. Oil - 2 tbsp
For Tofu fry 
  1. Tofu     - 400 grams (or Paneer)
  2. Barbeque sauce - 1 tbsp (or lemon juice)
  3. Ginger paste - ¼ tbsp
  4. Garlic paste - ¼ tbsp
  5. Yellow mustard paste - 1 tsp (optional)
  6. Yellow cornmeal flour - 1 tbsp
  7. Garam masala powder - 2 tsp
  8. Salt    - as per taste
  9. Oil     - 2 tbsp.
Method 
  1. For fried soya chunks - boil the soya chunks in a hot, salted water for 10 minutes. Then squeeze the water well out of the soya and put it in a bowl. Then add ginger paste, garlic paste, coriander powder, cumin powder and salt and mix everything. Finally sprinkle the flour on top and mix everything well until the flour covers all of the soya chunks. Marinate this for 20 minutes. Then add oil in a pan and heat for 2 minutes. Add the soya chunks and fry it on all sides over medium heat for 10 minutes. Keep this cooked soya chunks aside for later use. 
  2. For crispy tofu - in another bowl add cut cubed tofu, ginger paste, garlic paste, barbeque sauce, mustard paste, garam masala powder and salt. Mix everything well until the mixture coats well on tofu. Marinate this for 20 minutes. Then oil in a pan and heat for 2 minutes. Add the tofu pieces one by one and fry it on all sides over medium heat for 10 minutes or until it turns into light brown colour.

  3. For soup - add oil in a saucepan and heat for 2 minutes. Then add bay leaves, cinnamon, onion, garlic and tomatoes. Fry them for a minute. Then add vegetable broth and salt. Mix them well and close the lid. Let cook for 15 minutes. When the tomatoes are cooked and tender mix everything together in a blender. Strain the soup to get rid of the tomato seeds. Then add the milk cheese, grated Parmigiano Reggiano and sugar. Mix everything together until the soup looks smooth and creamy.

Serve the soup hot with some fried soya chunks on top, add some crushed pepper. Enjoy it along with some tofu fry and some breads. 😊
