#Pudhina Chutney ( #Mint chutney or Dip)

 This is a very simple chutney or dip made with mint leaves which is used to eat with south Indian breakfast like Idli, Dosa or also with rice. I have given here two different versions of making this which is completely my own version of making. I hope you would also love this. Lets get into the recipe..😊😊

Serves :- 3-4 people
Preparation time :- 10 mins
Cooking time :- 10 mins
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon


Ingredients

Original version (The dhal/lentil mentioned in this recipe will be found in Indian stores)

  1. Mint leaves - 200 grams / 2 cups approximately
  2. Coriander leaves - 100 grams / 1 cup approximately
  3. Garlic - 3 cloves
  4. Ginger - 1 inch piece
  5. Shallots - 50 grams / ¼ cup approximately
  6. Channa dhal - 2 tsp
  7. Red chillies - 3  (optional)
  8. Cumin seeds - 1 tsp
  9. Tamarind paste - ¼ tbsp 
  10. Oil - 1 tbsp (sesame oil)
  11. Grated coconut - 60 grams / ½ cup

Method 

  1. In a pan add oil and heat it. Then add channa dhal, red chillies, cumin seeds. Saute them for 20 seconds. 
  2. Then add chopped shallots, garlic, ginger, mint leaves. Saute it for 2 minutes. Then add coriander leaves and coconut. Saute it for a minute and take it off from the stove. 
  3. Allow it to cool down completely. Then mix it into a fine smooth or coarse chutney/dip.

 

Modified Version 

  1. Mint leaves - 200 grams / 2 cups approximately
  2. Coriander leaves - 100 grams / 1 cup approximately
  3. Garlic - 3 cloves
  4. Ginger - 1 inch piece
  5. Shallots - 50 grams / ¼ cup approximately
  6. Tomato - 1 medium size
  7. Cashew nuts - 5 pieces
  8. Red chillies - 3  (optional)
  9. Cumin seeds - 1 tsp
  10. Oil - 1 tbsp
  11. Grated coconut - 60 grams / ½ cup

Method 

  1. In a pan add oil and heat it. Then add cashew nuts, red chillies, cumin seeds. Saute them for 20 seconds. 
  2. Then add chopped shallots, garlic, ginger, mint leaves and tomato. Saute it for 2 minutes. Then add coriander leaves and coconut. Saute it for a minute and take it off from the stove. 
  3. Allow it to cool down completely. Then mix it into a fine smooth or coarse chutney/dip.
