#Pumpkin Orange Soup with mild spices

Pumpkin soup is a usually 'bound' soup made from a purée of yellow pumpkin. It is made by combining the meat of a blended pumpkin with broth or stock. It can be served hot or cold, and is a popular Thanksgiving dish in the United States. There are lot number of recipes for this soup. I have given here my style of recipe which also my family's favourite one. Lets get into the recipe....😊😊

Serves :- 3-4 people
Preparation time :- 15 mins
Cooking time :- 20 mins
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon


Ingredients 

  1. Yellow Pumpkin  - 300 grams
  2. Carrots - 3 medium sized 
  3. Sweet potato - 200 grams
  4. Oranges - 250 grams ( skin peeled)
  5. Ginger - 2 inch piece
  6. Cinnamon stick - 1 long one
  7. Cloves - 2 pieces
  8. Bay leaves - 1 
  9. Cumin seeds - 1 tsp
  10. Oil - 1 tbsp
  11. Black pepper - as per taste. 
  12. Salt - as per taste 
  13. Broth - 500 ml / 2 cups  ( Chicken or vegetable or any) ..this is optional
  14. Water - as required

Method 

  1. First peel the skin of pumpkin, sweet potatoes and carrots. Chop them into medium sized pieces. 
  2. In a stove keep a pot then add 1 tbsp oil and heat it up. Then add cumin seeds, bay leaves, cinnamon stick and cloves. Then add chopped ginger, onion, pumpkin, sweet potato and carrots. Saute them all well for 2 minutes. 
  3. Next add broth and water until all vegetables sinks. If you do not like to add broth leave that and replace it with water itself.  Add some salt as per your taste. 
  4. Mix everything and add peeled oranges into it. Now close the pot and allow it to cook for 20 minutes in medium flame until vegetables are super soft. If you are using pressure cooker cook it for about 5 whistles or for about 15 minutes in medium flame.
  5. When the vegetables are well cooked, remove the cinnamon stick, bay leaves and cloves. 
  6. Then blend the vegetables using a blender or mixer as smooth pureed soup. You can always adjust the consistency of the soup by adding more or less water. 
  7. Check the salt taste and add if you want more. Also add crushed pepper as per your taste. 
  8. Sprinkle this roasted pine nuts or any nuts on the soup and put some yogurt on top of it. 
Serve it hot or warm with your favourite breads. 👌😋
