#Curd Rice ( South Indian style yogurt rice)

 Curd is also called Yogurt. This rice is very simple to make and also healthy for your tummy. The small amount of  spices added to this rice gives an unique flavour and also helps for good digestion. This is my style of recipe. The fruits and vegetables which are specified in the recipe can be used according to your taste and wish. Lets get into the recipe 😊

Serves :- 2-3 people
Preparation time :- 10 mins
Cooking time :- 15 mins
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon

Ingredients

  1. Basmati rice - 180 grams / 1 cup 
  2. Water - 450 ml / 2½ cup
  3. Yogurt - 245 grams / 1 cup
  4. Cooking cream - 240 ml / 1 cup ( or full fat milk)
  5. Grated Carrots - ¼ cup / 1 small sized (optional)
  6. Pomegranate fruit - ¼ cup (optional)
  7. Oil - ½ tbsp
  8. Cumin seeds - ½ tsp
  9. Ginger chopped - 1 tsp
  10. Fresh coriander leaves - few 
  11. Salt - as per taste

Method 

  1. First measure the rice and wash it 3 times. Then measure the water and it to the rice. Let it soak for 10 minutes. 
  2. After 10 minutes cook the rice until the rice is cooked very soft and all the water evaporates. Add 2 tsp of salt to the rice while cooking. Note that you cook the rice with covering the pot, not in a open pot.
  3. Once the rice is cooked smash the hot rice slightly with a wooden spoon. If you like to smash it well you could also do that. 
  4. Then add the yogurt and cream / milk , mix it well. Taste the rice now and add salt if you like to add more. 
  5. In a separate pan add oil and heat it. Then add cumin seeds, chopped ginger and roast it for 15 seconds. Add this mixture to the yogurt rice mix. Also add the carrots, pomegranate and coriander leaves to that. Mix until all well combined. 
  6. That is it your rice is ready!!!
