#Masala Dosa ( South Indian crispy Crepes filled with mashed potatoes)

Dosa is a Crepe made using fermented rice batter. Masala dosai or masale dose is a variation of the popular South Indian dosa, which has its origins in Tuluva Mangalorean cuisine of Karnataka. The batter is made from rice and lentils, then dosa is made and filled with potato, ghee and curry leaves and served with chutneys and sambar. Most south Indians make this batter at home. If you are in a place where you could not make it try getting this Idli/Dosa batter from your nearest Indian store.  Here is the recipe of my style, lets get into....😊


Serves :- 3-4 people  ( makes 10 - 12 pieces approximately )
Preparation time :- 15 mins
Cooking time :- - 1 minute for each 
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon


Ingredients

  1. Dosa batter - 1 kg ( approximately)
  2. Potatoes - 3 big or 6 medium sized
  3. Cashew nuts - 4 pieces
  4. Mustard seeds - ½ tsp (optional )
  5. Coriander leaves - few
  6. Turmeric powder - ½ tsp
  7. Oil - ½ tbsp
  8. Salt - as per taste

Method

  1. In a pan add oil and heat it up. Then add mustard seeds and then cashew nuts. Then add the chopped potatoes, salt and turmeric powder. Mix everything well. Add ¼ cup water close the pan with a lid and cook it for 10 minutes in medium heat. 
  2. When the potatoes are well cooked smash the potatoes roughly as you like. Then give a good mix and cook it until water evaporates completely. Finally add the chopped coriander leaves and keep this mixture aside. 
  3. Next heat a Dosa pan or Crepe pan. Apply some oil and wipe it with a tissue paper to avoid sticking. The take some dosa batter and pour it on the pan, gently spread the batter evenly in a circular motion as shown in the below video. 
  4. Then drizzle some oil on the sides, and wait until the edges turns slight brown color. The add some potato mixture, fold the dosa and serve it hot. 
  5. If you make thick dosa then you need to cook it on both sides, as we do for pancakes. Please watch the video below for your reference if you are doing it for the first time. 



Chilli - Chutney (Optional)
 

  1. Red chillies - 10 ( Indian dried chillies)
  2. Garlic - 3 cloves
  3. Shallots -  3 
  4. Coconut - ¼ cup ( freshly grated or desiccated coconut)  
  5. Tamarind paste - ½ tbsp
  6. Salt - as required 

In a pan add  ¼ tbsp oil and heat it. Then add all the ingredients for a minute in a medium flame. Allow it to cool down an grind it into a smooth paste like a dip. You could use this chutney as a dip for normal dosa or Idli or Roti.
