#Homemade Ghee

#Egg Kurma (Curry in South Indian style)

 There are various ways and methods to do this curry. This is of my style with splash of some south Indian flavours. Without any further explanation lets get into the recipe. 😊


Serves :- 2-3 people
Preparation time :- 15 minutes
Cooking time :- 15 minutes
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon

Ingredients

For Curry 

  1. Eggs - 5 to 6 
  2. Onion - 1 medium size
  3. Tomato - 2 medium size
  4. Ginger - ½ tbsp ( paste or chopped) 
  5. Garlic - ½ tbsp ( paste or chopped)
  6. Curry leaves -  few ( if you like)
  7. Coriander leaves - few
  8. Mustard seeds - 1 tsp
  9. Cumin Seeds - 1 tsp
  10. Turmeric powder - 1 tsp
  11. Coriander powder - ½ tbsp
  12. Garam masala powder - 1 tsp
  13. Chilli powder - 1 tsp ( if you like)
  14. Salt - as per taste
  15. Oil - 2 tbsp

For Coconut paste 

  1. Grated coconut - ¼ cup + 2 tbsp ( or desiccated coconut)
  2. Fennel seeds - 2 tsp
  3. White poppy seeds - 1 tsp ( if you have)
  4. Cashew nuts - 3
If  it is not possible for you to make this coconut paste, you could just add ¼ cup of coconut milk only. This also gives equal taste to the dish. 😊

Method 

  1. First in a pot add eggs and boil them for 8 minutes. Once boiled peel the shells and keep them aside. 
  2. Next in a mixer add all the ingredients which are give above (For Coconut paste ). Add ¼ cup of water and grind into smooth paste. Keep this aside. We will use this paste later. 
  3. In another pan add oil and heat it in a medium heat. Then add mustard seeds, cumin seeds and then chopped onion. Saute for a minute. 
  4. Then add ginger and garlic paste ( or chopped), sauté for 1 minute. Then add chopped tomatoes, salt 1 tsp, turmeric powder, coriander powder, chill powder and garam masala powder. Mix them all well and add ¼ cup of water and cook it for 2 minutes in medium heat. 
  5. Once this masala mixture is cooked add the boiled eggs, curry leaves and the coconut paste which was prepared before ( or coconut milk only) and ¼ cup of water. Give a gentle mix and adjust the salt according to your taste level. Let this mixture boil for 3 minutes in low heat. 
  6. Finally add fresh coriander leaves and turn off the heat. It is done. 


Tip

If you like to have a thick curry then grind the tomatoes as puree and and that. 👍
