#Spiced Moist Carrot Cake

This is such a wonderful cake and all my friends and family love this. I hope that you all would have tasted carrot cake. But this one is loaded with spices and tastes delicious ( Also check my page for 'Basics of baking'). Hope you would also like it. Let go....

Serves:- 6 to 8 people
Preparation time :- 20 mins
Baking time :- 40 mins
Measurements :- in grams (or) cups & spoons

*tbsp - Tablespoon 
*tsp   - Teaspoon



Ingredients

For cake
  1. Shredded Carrots - 300 grams   / 3 cups
  2. Eggs      - 3 large 
  3. Sunflower oil  - 375 ml   / 1 cup + 3 tbsp 
  4. Flour  -  250 grams  / 1.5 cups 
  5. Brown sugar  - 200 grams  / ¾  cup
  6. White sugar  - 200 grams  / ¾  cup
  7. Cinnamon powder -   2.5 grams  /1 tsp 
  8. Nutmeg powder   -     1.5 grams  / ½ tsp
  9. Cloves powder  -     1.5 grams / ½ tsp 
  10. Dry Ginger powder -  1.5 grams / ½ tsp
  11. Baking powder  -  4.5 gram   /1 tsp 
  12. Baking soda   -  2.5 gram  / ½ tsp
  13. Salt  -   1.5 grams  / ½ tsp 
  14. Crushed Walnuts   - 100 grams  / 1 cup     (optional)  
  15. Raisins - 100 grams  /  ¾  cup  (optional)
Cream Cheese Frosting 
  1. Cream Cheese - 250 grams  / 1 cup
  2. Icing sugar  - 150 grams  / ¾  cup 

Method 
  1. Grease the cake pan and dust it with flour or line it with parchment paper. Preheat the oven at 180 degree Celsius. 
  2. Sift all the dry ingredients like flour, cinnamon powder, nutmeg powder, clove powder, baking powder, baking soda and salt into a separate bowl.
  3. In another large bowl add room temperature eggs and sugar. Beat them well with a hand mixer or with whisk until they turn out light yellow in colour and creamy. 
  4. Then add oil, raisins and carrots, mix them well combined. 
  5. Next add all these dry ingredients into this wet ingredients bowl. Make sure you add it slowly in three batches. Mix it well until all the ingredients combined well.
  6. Pour the batter into the cake pan only till half the way or till ¾  level and bake it for 30-40 minutes or until the toothpick comes out clean. Allow the cake to cool.
  7. Meanwhile take the cream cheese which is in room temperature. Beat well until its creamy. Add Sugar and mix it well combined. Once the cake is cooled down  spread this cream cheese on the cake and decorate it of your choice.
