#Strawberry Cupcakes

A lovely cupcake with the taste of fresh strawberries. You can use the same recipe to make it as a one whole cake ( Also check my page for 'Basics of baking'). I hope you and your kids will love this treat. Lets go.....😊😊


Makes:- 12 to 15  cupcakes
Preparation time :- 20 mins
Baking time :- 25 mins
Measurements :- in grams (or) cups & spoons

*tbsp - Tablespoon 
*tsp   - Teaspoon

Ingredients

For Cake
  1. Flour    -  225 grams / 1 and ½ cups
  2. Baking powder   -  28 grams  / ½ tbsp
  3. Sugar    -  85 grams /  ⅔  cups
  4. Salt    -  1.5 grams  / ½ tsp
  5. Butter   - 150 grams /  1 + ½ cups
  6. Eggs     -  2 Large
  7. Fresh / Frozen Strawberries  - 180 grams  /  1 cup
  8. Vanilla extract    -  5 ml   / 1 tsp
  9. Sour cream / Thick yogurt    -  57 grams /  ¼  cup
For Buttercream Frosting
  1. Butter  - 250 grams  /  1 cup
  2. Powdered Sugar   - 250 grams  / 1 cup
  3. Vanilla extract  - 2.5 ml  /  ½ tsp
  4. Lemon Zest  - 2.5 grams  / ½ tsp

Method
  1. Preheat the oven for 180 degree Celsius. Line up the cupcake tray with liners. 
  2. In a bowl sift the dry ingredients like flour, baking powder and salt. Keep it aside.
  3. Make a fresh strawberry puree by grinding it or you can finely chop it. 
  4. In another bowl add room temperature butter and Sugar. Beat well until it becomes creamy. 
  5. Then add room temperature eggs one by one and mix it well combined.
  6. Now add the vanilla extract, strawberry puree and yogurt. Mix it thoroughly.
  7. Finely add the dry ingredients into this bowl little by little and mix it gently. Once all the ingredients are combined pour it half the way into each cupcake liners.
  8. Bake it for 20-25 minutes or until the toothpick comes out clean.
  9. For Buttercream frosting add the room temperature butter into a bowl. Make sure that butter is not too squishy or shapeless or runny. It has to be squishy at the same time should hold the shape. Beat it nicely until it is creamy. Then add vanilla extract, lemon zest and sugar little by little. Mix it well. Fill it in a piping bag and make you own design or you can just spread the cream on the cupcakes. 
Tips
  1. This cake batter can also be poured completely into a cake mould of your choice. 
  2. Same recipe can used with other fruits like blueberries or raspberries.
