#Lemon Cake

Yes, there are lots of recipes for lemon cake which you may find in many other blogs and video channels. This cake is my version of cake, even though the ingredients are same 😉 but the quantities are different. If you are beginner please do follow the process step by step so that you will get your final product without flaws ( Also check my page for 'Basics of baking'). Before starting this please make sure all your ingredients are at room temperature. I hope you will enjoy this soft, moist and tasty cake. Lets go......


Serves:- 6 to 8 people
Preparation time :- 30 mins
Baking time :- 40 mins
Measurements :- in grams (or) cups & spoons

*tbsp - Tablespoon 
*tsp   - Teaspoon


Ingredients
  1. Butter                          - 227 grams  / 1 cup
  2. Sugar                          - 200 grams / 1 cup
  3. Eggs                           -  4 large 
  4. Vanilla extract            - 1 tsp
  5. Lemon juice               - 1 tbsp
  6. Lemon zest                 - ½ tbsp
  7. Milk                            - 60 ml  / ¼  cup
  8. Sour cream or Yogurt - 60 ml / ¼  cup
  9. Flour ( Type 550)       - 250 grams / (1 cup + ½ cup + 1 tbsp)
  10. Baking powder           - ½ tbsp 
  11. Salt                              - ½ tsp
For Glaze
  1. Powdered sugar (Icing sugar)    - 146 grams  / 1 cup
  2. Lemon juice                               - 2 tbsp
Method
  1. First keep all the ingredients in room temperature. It should not be cold because you will not get the soft cake then. 
  2. Preheat the oven at 180 degree Celsius. If you do not have oven start your preheating process on the stove.
  3. Grease your cake pan (only grease). Pan size could be 25 cm round pan or loaf pan or Bundt pan. You could choose according to that. Or even you can line up the cupcake tray with liners and make it as cupcakes.
  4. In a separate bowl sift flour, baking powder and salt.
  5. Then in another separate bowl take the butter ( butter should be really soft and squishy).  Beat the butter using hand mixer in medium speed until it turns pale white colour. It takes around 30 to 40 seconds. If you are beating in your hands it might take some time I could not give precise time because it depends on your speed.
  6. Then add the sugar with the butter and beat it for 20 seconds or until combined together. With hand beat it for around 1 minute.
  7. Then add egg one by one with butter and sugar mixture. When you add each egg beat it for 10 seconds in medium speed. With hands you should beat it around 30 seconds for each egg addition.
  8. Next add lemon juice, zest, yogurt and half part of the sifted flour mixture. Mix this in low speed for 20 seconds. With hand you should mix this around 1 minute.
  9. Next add the milk and the other half flour mixture. Mix this again in low speed for 20 seconds. With hand you should mix this around 1 minute.
  10. Now dust the greased pan with flour completely. Then pour the cake batter into the tin which you prepared.
  11. Bake it in the middle rack for around 40 minutes or until the cake is done. If you have prepared it for cupcakes then bake it for 20 minutes. Please do not open the oven before the given timing to avoid the shrinkage of cake in the middle. 
  12. Finally check the cake with a tooth pick whether. If it comes out clean then the cake is done. 
  13. Allow the cake to cool in the cake pan itself for 5 minutes. Then slowly de-mould the sides and turn it upside down, your cake comes out clean.

For the glaze
Mix the icing sugar and lemon juice together so that you get a liquid mixture. If you wish you can add some coloured food gel to it.  Pour it on the warm cake all around. Then top it with your favourite fruits or berries.
