#Pizza

Yes, we all love pizza right ? 😃 So here is my way of doing pizza which will not fail even if it is your first try. All you need is follow the exact steps, little patience and muscle work for it. I guess we do not need too much explanation on this. We will go directly into the recipe line for making soft and crusty Pizza....


Serves :- 3 people
Preparation time :- 15 mins
Cooking time :- 25 mins
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon



For the Base Dough
Ingredients

Combination 1
  1. All purpose flour or Pizza flour - 300 grams  / 1 and ½ cups
  2. Dry yeast           - 4 grams / 1 and ½  tsp
  3. Sugar                 - 5 grams    / 2 tsp
  4. Salt                    - 5 grams   / 2 tsp
  5. Water                 - 190 ml  / ¾ th cup
  6. Oil(Olive or Sesame)  - 30 ml  / 2 tbsp
Combination 2
  1. Whole wheat flour (Type 1050) - 300 grams  / 1 and ½ cups
  2. Dry yeast           - 3.5 grams / 1 and ½  tsp
  3. Sugar                 - 5 grams    / 2 tsp
  4. Salt                    - 5 grams   / 2 tsp
  5. Water                 - 240 ml  / 1 cup
  6. Oil(Olive or Sesame)  - 45 ml  / 3 tbsp
Method
  1. In a bowl ½  cup of warm water, sugar and dry yeast. Mix and cover it, keep it aside for 7 minutes. Let the yeast get activated. For detailed steps for yeast activation check my Basics of baking page.
  2. Then in another big bowl add flour and salt. Mix it well, then add the yeast mixture and oil into it.
  3. Gently mix it with hand and pour the rest of the water little by little and form a slight sticky dough. If you feel very stick and watery then add some flour but slight sticky texture need to be maintained as shown in the picture.
  4. Next comes your strengthening part 😃 yes of course kneading part. Once all your dough is mixed together as shown in the picture then put your dough on a flat surface or plate and start kneading for 15 minutes. When you can stretch your dough for 10 cm without breaking it, then your dough is ready. 
  5. Initially you will feel the dough is sticky and messy. But when you are kneading for longer it will become very soft and smooth dough. Do not add extra oil or flour during this kneading process. Here is the video for your reference.......Start your timer.....💪😃
  1. Now add some oil on the dough and cover it, keep it aside for 1-2 hours for fermentation.
  2. After the dough has fermented, knock it out and divide it into equal 3 balls. Use flour for dusting and stretch it out in circle. Roll it into a thickness of Roti or Paratha....not more than that because while you cook the dough itself increases its size into double.  

For Basic Sauce and Topping 
Ingredients
  1. Tomatoes    -  6 medium sized 
  2. Garlic          - 3 cloves
  3. Chilli flakes - 1 tsp (optional)
  4. Dried herbs -  2 tsp  (Basil or Oregano or Rosemarie) 
  5. Olive Oil     - 2 tbsp
  6. Vegetables   - 1 cup of your choice
  7. Cheese         - 150 grams  ( Mozzarella) 
  8. Salt              - as per your taste
Method 
  1. In a pan add oil and heat up. Then add chopped garlic, herbs, chilli flakes and chopped tomatoes. Cook this until tomatoes are cooked well. Leave it aside and let it cool down. Later add salt to it and blend it into a smooth paste. This sauce will not be thick, it will be in a smoothie consistency. 
  2. Cut the vegetables of your choice and add ½ tbsp olive oil, some salt and herbs. Mix it well keep it side. 
  3. Grate the cheese and keep it ready.

Topping & Cooking Method

With Oven
  1. Preheat the oven for 10 minutes to the maximum temperature with both rod heating.
  2. Roll out the dough according to your pizza baking dish, brush it with some oil. 
  3. Place the rolled dough, spread some sauce, top it with vegetables and sprinkle cheese on it. Drizzle some oil on it finally.
  4. Place the dish on top rack and cook it for 10 - 12 minutes or until the sides get golden brown colour. 
Without Oven
  1. Take a large pan or tawa with a lid which covers conveniently. Keep it on stove and heat it with maximum heat. It has to be really hot. Do not disturb the heat transmission by reducing and increasing it. 
  2. Roll out the dough according to the pan size. Grease some oil and place the dough. Cook one side until you get nice golden spot. Then flip it over. 
  3. Now on the cooked sized spread the sauce, top vegetable, sprinkle cheese and drizzle some oil. You have to do all these really fast and close it with lid. Cook it for 5-7 minutes in the same high heat or until sides get golden brown.
