#Christmas Stollen Bread

Stollen is a fruit bread of nuts, spices, and dried or candied fruit which are soaked in rum for a day or more. Then it is baked and coated with powdered sugar or icing sugar. It is a traditional German bread eaten during the Christmas season, when it is called Weihnachtsstollen or Christstollen. I learned this through different sources and in different methods. So yet again my version of recipe here where I combined all the different methods as a one single simple recipe. Hope you will like it too. Lets get into the recipe.....😊

Serves :- 3-4 people
Preparation time :- 10 mins
Cooking time :- 20 mins
Measurements :- in grams and in spoons

*tbsp - Tablespoon
*tsp   - Teaspoon

Ingredients 

For soaking 

  1. Raisins - 100 grams / ½ cup
  2. Dried fruits/ berries - 100 grams / ½ cup
  3. Mixed spice powder  -  2 tsp
  4. Orange zest - 1 tbsp
  5. Dark rum - 350 ml / 1½ cup   ( or Orange juice ) 

For the starter dough  

  1. Warm water - 118 ml / ½  cup 
  2. Dry yeast - 7 grams /  ½  tbsp
  3. Sugar - ½ tbsp
  4. Flour - 75 grams / ½ cup ( All purpose flour / Type 550)

For the Bread dough 

  1. Flour - 450 grams / 2½  cups 
  2. Salt - 1½  tsp
  3. Sugar - 2 tbsp
  4. Grounded Almond - 100 grams / 1 cup 
  5. Mixed Spice powder - 1½  tbsp
  6. Butter - 100 grams / ¼ cup + 3 tbsp (room temperature)
  7. Warm milk - 100 ml / ½ cup (approx.)
  8. Powdered sugar - for coating

Method 

Step 1 (Soak the fruits )

In a bowl add all the ingredients which are mentioned above for soaking. Allow it the fruits to soak for at least one day on the kitchen counter. 

Step 2 ( Prepare the starter dough)

In another separate bowl add warm milk, sugar and yeast then wait for 10 minutes. Once the yeast is activated then add the flour. Mix it and keep it aside on the kitchen counter for a day. ( To learn the yeast activation technique click

Step 3 ( Prepare the bread dough)

  1. Next day start preparing your dough. In a bowl add flour, sugar, salt, grounded almond and spice powder. Mix it all well combined.
  2. Add starter dough and butter then combine everything together. Add warm milk little by little to the dough. The dough has to be slightly soft and sticky but not too sticky. 
  3. Once all the items are combined then start kneading the dough for 10 minutes exactly. After that add the soaked fruits with the dough. Knead the dough for 3 minutes. 
  4. Now keep the dough aside for 2 hours. Let it be fermented and rise as double size. 
  5. After 2 hours prepare your bread loaf pan by greasing butter all the side. Pre heat your at 200°C for 10 minutes.

  6. Divide the dough into two or three equal parts depending on your bread pan size. Roll and fold the dough as it fit to your bread loaf pan. In general there is a special rolling method for this Stollen, but here to make it simple we are following this way. 
  7. Bake the bread in the oven for 20 - 25 minutes or until the bread is done. You can smell the aroma all over your house while its baking. 
  8. When the bread is done allow it to cool down completely. Then apply some melted butter all over the bread. Then roll the bread on the powdered sugar so that it sticks to the bread.
